Ingredients:

2 cups of basmati rice

1 pound of boneless chicken or lamb

2 cups of yogurt

2 tablespoons of ginger-garlic paste

2 tablespoons of Biriyani masala

2 tablespoons of ghee or oil

A few saffron strands

2 cups of water

Salt, to taste

Fresh coriander and mint leaves, for garnish

Instructions:

  1. Soak the basmati rice in water for 30 minutes. Drain and set aside.
  2. In a large pot, heat the ghee or oil over medium heat. Add the sliced onions and fry until golden brown.
  3. Add the ginger-garlic paste and fry for a few minutes, until fragrant.
  4. Add the chicken or lamb and fry until it is browned on all sides.
  5. Add the chopped tomatoes and Biriyani masala. Stir well and cook for a few minutes.
  6. Add the yogurt and saffron strands and stir well.
  7. Add the water and bring the mixture to a boil.
  8. Add the drained rice and stir gently.
  9. Reduce the heat to low, cover the pot with a lid and cook for 18-20 minutes or until the rice is cooked and the liquid is absorbed.
  10. Once the rice is cooked, remove the pot from the heat and let it sit, covered, for 10 minutes.
  11. Fluff the rice with a fork and garnish with fresh cilantro and mint leaves.
